Ingredients:
- 3 eggs, slightly beaten
- 29 ounces canned pumpkin
- 12 ounces evaporated milk
- 1 cup granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground nutmeg
- 1 package yellow cake mix (super-moist variety preferred)
- 3/4 cup margarine (or butter), melted
- 3/4 cup chopped pecans
Directions:
- Preheat oven temperature to 375F (190C)
- Grease a 9 inch by 13 inch baking pan with 1 teaspoon butter and set aside
- In a large mixing bowl combine the beaten eggs, canned pumpkin, evaporated milk, granulated sugar, salt, allspice, cinnamon, ginger, and nutmeg. Stir thoroughly to combine the ingredients.
- Pour pumpkin mixture into the greased baking dish and spread into an even layer
- Sprinkle the cake mix evenly over the pumpkin mixture
- Drizzle the melted butter evenly over the top of the cake mix, then sprinkle with chopped pecans
- Place baking dish into the 375F (190C) oven and bake for 50 minutes
- Remove baking dish from oven and allow to fully cool. Refrigerate for at least one hour.
- Cut into 12 squares. The pumpkin squares may also be topped with whipped cream before serving.
